Ramon Noodle Chicken Salad
To feed a family of four:
6 packages of Ramon noodles
4 boneless chicken breasts
1 head of iceberg lettuce
1 chopped red or yellow bell pepper
1 chopped green bell pepper
1 bag of shredded mozzarella cheese
1 package of sliced cherry tomatoes
1 package of bean sprouts
1 package of alfalfa sprouts
1 package of sliced fresh mushrooms
1 package of fresh blueberries
2 cans of mandarin oranges
Olive oil
Salt & pepper
Teriyaki sauce
Salad dressings
Slice chicken breasts and fresh mushrooms and fry in olive oil with salt, pepper, and light teriyaki sauce. Bring a large pot of water to a boil, add Ramon noodles and boil until desired consistency. Mix iceberg lettuce, chopped peppers, cherry tomatoes, bean sprouts, alfalfa sprouts, blueberries, and mandarin oranges together in large salad bowl. Fix each plate as follows: place warm noodles on plate, add layer of mozzarella cheese, add layer of warm chicken and mushrooms, add layer of salad mix, pour salad dressing over the top. Enjoy!
